Ingredients
  

  • ½ cup almond flour
  • ½ cup full fat cream cheese
  • 4 large eggs
  • 24 cocktail-size sausages keto approved link
  • 12 thin slices Cheddar Cheese , diagonally halved
  • butter , for greasing

Instructions
 

  • Line a baking sheet with parchment paper. Set aside.
  • Cook the sausage links in skillet as directed on package. Set aside.
  • In a bowl beat the eggs and cream cheese until well combined.

  • Add the almond flour and mix until smooth.
  • Lightly grease a non stick skillet with butter.
  • Heat the skillet over medium low heat until hot.
  • Drop 1 ½ tablespoons of batter for each pancake onto the hot skillet.
  • Cook until small bubbles begin to form on the top.
  • Carefully flip the pancakes and cook on the other side 30- 60 seconds or until cooked through.

  • Once the pancakes are done, wrap the piece of cheese around the sausage.
  • Roll the pancake around the sausage, and secure with a large toothpick. Repeat until all the pancakes and sausages are used.
  • Place the pancakes on the prepared sheet.
  • Preheat a broiler. Place the baking sheet under the broiler for 2-3 minutes, or until cheese melts.
  • Serve warm with your favorite sauce.
