Egg salad is a terrific keto meal and it’s a lunch that is easy to make. Besides being delicious, you get all of that awesome protein from the eggs. Also, you can add in veggies that help fill you up, too.

This recipe calls for red onion, but technically, you can use any type of onion. We recommend adding some celery, too. Keep in mind that mayonnaise is a keto-friendly condiment, but don’t go too crazy with it because it is high in calories.

The fresh dill, fresh chives, and Dijon mustard flavor this egg salad delightfully.

WHAT YOU NEED TO MAKE KETO HEALTHY EGG SALAD

  • Hardboiled Eggs
  • Mayo (to keep it Whole30, make sure to get a compliant mayo. Primal Kitchen is favorite)
  • Red Onion
  • Fresh Dill
  • Fresh Chives
  • Dijon Mustard (also read labels to make sure its Whole30)
  • Salt & Pepper

LET’S MAKE EGG SALAD:

  1. Add the chopped hardboiled eggs and remaining ingredients to a large bowl and mix to combine
  2. Taste and add seasoning as needed
  3. Serve over lettuce or as a sandwich, enjoy!

  • Make your hard boiled eggs in the Instant Pot- it is quick and they are so easy to peel!
  • Change it up by adding your favorite fresh herbs
  • You can leave the eggs in a larger cube or fine dice depending on your preferences
  • Use plain greek yogurt in place of mayo for a lower fat and high protein option
